My instant pot corned beef hash is one of the simplest meals you will ever make. A perfect reminder of a meal my Gran used to make for me.

Ingredients

  • 2 tbsp Olive oil
  • 1 Large Onion (roughly chopped)
  • 1 tsp Garlic salt
  • 2 Whole Tomatoes (sliced)
  • 4 Whole Carrots (roughly chopped)
  • 1.1 Kg Potatoes (peeled)
  • 300 ml Beef stock
  • Season to taste
  • 340 g Corned beef (cubed). This is one tin.

Instructions

  • Set the pot to saute and then add the onions. Fry until softened for around 3 minutes. Add the garlic powder and tomatoes and continue until they are broken up (around another 3 minutes.
  • Now add the carrots and potatoes. Stir everything together before adding the beef stock.
  • Season to taste and put the lid on the instant pot. Set on high pressure for 6 minutes and when the time is up, leave under pressure for another 6 minutes. now do a quick release and remove the lid.
  • Set the pot to saute and add the corned beef. Stir in and cook until the corned beef is heated through. This should take around 3 minutes.
  • Serve and enjoy.
