    Ingredients

    • 2.25 kg Potatoes Leave the skin on.
    • 250 g Butter I used salted.
    • 200 ml Chicken stock Vegetable stock would also work well.
    • To taste Salt and pepper
    • 250 g Bacon (diced) I used smoked, but unsmoked would be fine.
    • 250 ml Milk I used semi skimmed (2%), but full fat would be good.
    • 200 g Soft cheese I used own brand, but philadelphia would work well.
    • 125 ml Sour cream
    • 3 tsp Chives (dried)
    • 3 tsp Parsley (dried)
    • 2 tsp Onion powder
    • 2 tsp Garlic powder
    • 4 Spring (green) onions Roughly chopped
    • 250 g Cheese (grated) I used Red Leicester, but most cheddar would be OK (save around 50g - 2tbsp, for the topping).
    Metric - US Customary

    Instructions

    • Cut the potatoes into even-sized chunks and add to the instant pot. Add the butter and chicken stock. Season to taste.
    • Put the lid on the instant pot and set on high pressure for 3 minutes.
    • Turn the oven on to preheat at 190 C (370 F).
    • Fry the chopped bacon until crispy whilst the potatoes are cooking.
    • Leave the instant pot under pressure for another 6 minutes and then do a quick release.
    • Add the milk, soft cheese and sour cream.
    • Either mash with a hand masher or use an electric mixer
    • Add the dried chives, parsley, onion and garlic powder and mash again.
    • Fold in the crispy bacon, spring (green) onions and grated cheese.
    • Transfer to an oven proof dish.
    • Top with the remaining cheese and bake until the cheese melts thoroughly (around 20 minutes).
    • Serve and enjoy.

      Hi,

      I love your recipe I am a big fan of mashed potatoes and adding in bacon to it will make the perfect blend for me and my wife. I am not a great cook, but I will ask my wife to help me with the preparation and try this recipe.

      I also took a look at the instant pot mushroom risotto recipe and that will be for next week hopefully 🙂

      First of all, thank you so much for sharing such a wonderful recipe with me. I love to eat potatoes and bacon. They are delicious and budget-friendly and have become a family favourite for us. I loved watching the video on YouTube and I got some great tips you need to make this recipe a lot better. 

      Finally, I will be sure to make your recipe and I will let you know what I think.

      Thank you for sharing your recipe. I am vegetarian by myself, but my girlfriend loves meat and especially bacon-;) We have been in the UK for two weeks now, and all she would have for her breakfast was the traditional English breakfast with bacon, beans, and sausage. As I am cooking a lot and already losing inspiration on what to cook -  mostly for her, I got great inspiration from your article. In order to make it OK for me, I can replace the bacon with some vegetarian options. I don't mind preparing meat. Thank you for inspiration!

        Hi Julius. I'm glad my recipe inspired you. You could replace the chicken stock with water or vegetable stock and remove your portion before adding the bacon to make the recipe vegetarian for you and bacony (is that a word!) for your girlfriend.

      That looks delicious. I am a great fan of mashed potato ( although not very good for the waistline) there are a lot of variations that could be done with this recipe, for instance adding corned beef or mushrooms.

        It's definitely not a great recipe if you're on a diet! Great idea to try corned beef.
